I’m grateful I took the time to menu plan and cook ahead so all my meals for this weekend are done. It makes a big difference in the amount of sleep I get working three 12s in a row. Healthy, tasty, and vegan soup, salad, and sandwich combos FTW! There’s lentil and rice soup, edamame hummus and tofu for wraps, chickpea salad for sandwiches, and tabbouleh salad. Yum!
